For the month of March the Hungarian Cooking Challenge was to make Kolozsvári káposzta or translated, Layered Sauerkraut. I was not familiar with this recipe when I received it in email. I did make an alteration in that I did not use smoked sausage mainly because I could not find one that was nitrite/ nitrate free (I try to only eat meats without nitrites/ nitrates). I enjoy all the components of this recipe but to be honest I did not like this recipe. Maybe it’s because I left out the sausage but I think it’s actually texture thing. The other diners enjoyed the meal but no one was adamant about having it again so I won’t be making this one again. But the whole purpose of the challenge is to try new things so mission accomplished.
